Nashi Pear and Persimmon Salad with Mandarin Dressing

Ingredients

2 nashi pears, washed, stalk removed and sliced finely
2 persimmons, washed, stem removed and sliced finely
3 cups rocket, washe
½ cup raw almonds
½ cup pumpkin seeds

 

Dressing Ingredients

Juice of 1 mandarin
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 tablespoon honey

 

Method

First, make the dressing by whisking together all the dressing ingredients in a small bowl

Place the sliced persimmon, pear and rocket into a large bowl and toss well

Sprinkle the almonds and pumpkin seeds over the salad 

Drizzle salad dressing over the salad and toss. Keep salad in fridge until it is served to ensure the persimmon and pear don’t turn brown
