Apricots with Bocconcini
Serves: A crowd as finger food

Ingredients
12 fresh apricots
1 tub of cherry or baby bocconcini (if you cant find this type of cheese use light cream cheese)
Toppings;
Basil, chopped
Chilli, sliced
Pistachio nuts, chopped
Method
Cut apricots in half and remove stone
Halve each bocconcini and place in the centre of each apricot half
Alternate chilli and basil as toppings and sprinkle with pistachio nuts
Remove from the fridge 5 minutes prior to serving so they are not too cold
