Carrot and Kūmara Rostis

Ingredients
3 carrots, grated
1 kūmara, grated
100g cheddar or haloumi cheese, grated
¼ red onion, finely chopped
2 garlic cloves, finely chopped
2 eggs
½ cup flour
Handful fresh parsley, roughly chopped
Olive oil
Juice of 1 lemon
Lite sour cream or natural yoghurt to serve
Method
Place the carrot, kūmara, cheese, onion and garlic, in a large bowl and stir to combine
Add the eggs, flour, parsley, and lemon juice and mix well
Heat a large skillet over medium heat and add oil
Divide the mixture and press firmly to create six round patty shapes
Cook for 5 minutes on each side or until golden and crispy
Serve warm with sour cream, extra red onion and parsley leaves
