Cucumber Salad with Sesame Ginger Dressing
Serves: 4 as a side

Ingredients
1 large cucumber or 2 small, finely sliced lengthwise with a peeler or mandolin
3 teaspoons sesame seeds
¼ teaspoon red chilli flakes
Handful fresh coriander, roughly chopped
Dressing
1 teaspoon grated ginger
Juice of 1 lemon
1 teaspoon sesame oil
2 tablespoons olive oil
2 tablespoons tamari or soy sauce
Method
Combine dressing ingredients together and mix well. Set aside
In a serving bowl, combine the cucumbers with the dressing. Top with sesame seeds, chilli flakes and coriander leaves
Serve immediately
