Feijoa, Greens & Cranberry Salad

Ingredients
6 feijoas, peeled and sliced
4 cups mixed greens
½ cucumber, sliced, roughly chopped
¼ cup feta, crumbled
½ red onion, finely sliced
¼ cup pistachio nuts, shells removed
¼ cup almonds, roughly chopped
¼ cup cranberries, roughly chopped
Dressing
1 tablespoon honey
4 tablespoons olive oil
3 tablespoons white wine vinegar
Salt and pepper
Method
In a small bowl, mix-together the dressing ingredients
In a large bowl, combine salad ingredients and drizzle with dressing just prior to serving
