Garlic & Herb Pasta
Serves: 2

Ingredients
4 garlic cloves, minced
1 cup parsley, finely chopped
250g pasta of choice
¼ cup olive oil
1 cup olives
2 tablespoons butter
¼ teaspoon dried chilli flakes
Zest of ½ lemon
Juice of 1 lemon
Method
Cook pasta in a large pot of boiling water according to packet instructions. Once cooked, drain pasta and place into a bowl
Heat a pan to medium heat and add 3 tablespoons of olive oil. Add garlic and cook for 1-2 minutes. Toss in olives and cook for a further minute
Turn heat to low and tip pasta into the pan. Add butter and parsley and cook for 2 minutes, stirring to combine
Remove pasta from the heat and add lemon juice, lemon zest and chilli flakes
Place pasta into 2 bowls or plates and drizzle with the extra olive oil. Serve warm
