Garlic Pasta with Cherry Tomatoes

Ingredients
300g cherry tomatoes
220g spaghetti pasta
3 garlic cloves, minced
¼ cup olive oil
¼ cup Parmesan cheese
½ cup fresh basil leaves
Pinch black pepper
Method
Cook spaghetti until al dente according to package directions and drain
While the pasta is cooking, heat a skillet over medium heat and add 1 tablespoon of oil. Add the cherry tomatoes and cook until soft, around 5-7 minutes. Add the garlic and pepper and cook for 1 minute
Using a spoon or potato masher, mash the tomatoes to release their juices.
Cook for another 5 minutes until the tomatoes are very soft
Place the cooked pasta on top of the tomato, along with the basil and Parmesan cheese. Gently mix until combined
Serve immediately topped with extra basil leaves
