Grapefruit, Tomato & Feta Salad with Balsamic Drizzle

Ingredients
2 large grapefruit, peeled and chopped into small pieces
3 large tomatoes, sliced
4 cups rocket or baby spinach
¼ red onion, thinly sliced
¼ cup pistachios, shelled
1 handful basil leaves
¼ cup feta, crumbled
Dressing
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
Black pepper
Method
In a small bowl, mix-together the dressing ingredients
In a large bowl, combine all the salad ingredients and drizzle with salad dressing
Notes
- Grapefruit can affect some prescription medicines so be sure to check your labels before enjoying them
- This recipe is equally delicious with the more commonly available yellow grapefruit
