Greek Potato Salad with Feta
Serves: 4 as a side
Preparation: 10 Minutes
Cooking: 25 Minutes
Ingredients
400g potatoes, washed and cut into 3cm cubes
1 cup pitted olives, halved
2 cups cherry tomatoes, halved
½ cup fresh dill, chopped
100g feta, crumbled
3 tablespoons olive oil
Black pepper
Dressing Ingredients
Juice of 1 lemon
3 tablespoons olive oil
3 tablespoons white wine vinegar
2 small garlic cloves, minced
Black pepper
Method
Preheat the oven to 180°C
Spread potatoes onto an oven tray or baking dish and drizzle with olive oil. Sprinkle with pepper and roast for 25 minutes or until golden
While potatoes are cooking, combine dressing ingredients in a small bowl
Once cooked, allow the potatoes to cool slightly and then place into a big serving bowl. Add olives, tomatoes, feta, and dill
Cover with salad dressing and combine well before serving
