Herbed Smashed Potatoes

Herbed Smashed Potatoes
Serves: 2-3
Preparation: 10 minutes
Cooking: 35 minutes
Ingredients
12 small potatoes
Pinch salt & pepper
3 tablespoons olive oil
Dressing
½ cup fresh parsley, roughly chopped
2 garlic cloves, crushed
1 teaspoon chilli flakes
2 tablespoons white wine
1 tablespoon olive oil
Juice of 1 lemon
Method
Preheat oven to 200°C
Cook potatoes in boiling, salted water for 15 minutes or until they are tender. Drain
Place potatoes on an oven tray and, using a fork, press down the centre to smash the potato. Repeat for all potatoes
Drizzle olive oil over the potatoes and sprinkle with salt and pepper. Bake for 20 minutes or until brown and crispy
While potatoes are cooking, mix dressing ingredients together in a small bowl. Serve with the potatoes
