Kūmara and Orange Bliss Balls

Kūmara and Orange Bliss Balls

Serves: a crowd

Preparation: 20 minutes

Cooking: 20 minutes

Ingredients

2 large orange kūmara, cooked
Zest from half an orange
1 tablespoon fresh orange juice
1 cup dried dates
½ cup cocoa powder
1 cup shredded coconut (plus extra to coat balls)\
½ teaspoon cinnamon
½ cup almonds (roasted without salt)
½ cup cashews (roasted without salt)
1 tablespoon chia seeds
2 tablespoons maple syrup

Method 

Boil kūmara until cooked through (about 20 minutes) and leave to cool

Add all ingredients into a food processor and whizz until combined

Then using clean hands, roll mixture into balls (about a heaped teaspoon of mixture per ball)

When finished making balls, roll in shredded coconut and refrigerate for an hour to firm up

NB:

  • Keep in the fridge
  • These are a great alternative to sugary junk food to curb your sweet tooth
