Kūmara, Apple & Feta Salad
Serves: 4 as a side

Cooking: 20 Minutes
Ingredients
2 large kūmara, washed & cut into small pieces
1 apple, cored & thinly sliced
1 bunch kale, roughly chopped
1 tablespoon olive oil
1/3 cup feta, crumbled
1/3 cup dried cranberries
¼ cup sliced almonds
Dressing
Juice of 1 lemon
2 garlic cloves, minced
1 tablespoon Dijon mustard
4 tablespoons olive oil
Pinch black pepper
Method
Preheat the oven to 180°C
Place kūmara on an oven tray and drizzle with olive oil. Roast for 20 minutes or until golden
In a small bowl, add dressing ingredients and mix well
In a large bowl or serving dish, combine kale, roasted kūmara, apple, cranberries, and almonds
Drizzle with salad dressing and top with crumbled feta
