Kūmara & Herb Frittata

Ingredients
2 kūmara, scrubbed & sliced into thin rounds
1 red onion, thinly sliced
1 cup kale, roughly chopped
1 handful dill, roughly chopped
1 handful coriander
6 eggs
½ cup milk
¼ cup feta, crumbled
2 tablespoons olive oil
Method
Preheat oven to 180°C
Place kūmara onto an oven tray and drizzle with olive oil. Roast for 15-20 minutes or until tender
Heat a skillet or fry pan over a medium heat. Sauté kale and onion until soft, 5-6 minutes. Remove from the heat
Beat the eggs in a bowl, add milk and mix again
Pour the eggs into the skillet and add the kūmara, coriander, dill and sprinkle with feta
Bake in the oven for 15 minutes or until the centre is cooked through
Remove from the oven, cut into pieces and serve warm
