Kūmara Stuffed with Sautéed Kale and Parmesan

Kūmara Stuffed with Sautéed Kale and Parmesan

Preparation: 5 minutes
Cooking: 30 to 35 minutes
Ingredients
6 medium orange kūmara
2 handfuls purple kale
2 handfuls green kale
2 cloves garlic, crushed
1 teaspoon chilli flakes
Parmesan to taste
Splash of olive oil
Method
Preheat oven to 180˚C
Prick kūmara with a fork and bake until cooked through (about 30 to 35 minutes)
While kūmara is baking sauté kale in olive oil, garlic and chilli flakes (add a couple tablespoons of water to help wilt the kale)
Split cooked kūmara down the middle while still warm and stuff with kale
Sprinkle with a little parmesan and serve
NB:
- Cooking time will depend on size of kūmara
- Choose kūmara of similar size to ensure they are cooked through at the same time
