Kūmara Wedges with Homemade Ranch Dressing

Ingredients
2 large kūmara, peeled and sliced into thick wedges
2 garlic cloves, minced
1 small bunch fresh parsley, chopped
Pinch salt
1 teaspoon paprika
3 tablespoons olive oil
Dressing Ingredients
Juice of 1 lemon
½ cup sour cream
1 clove garlic, minced
¼ cup parsley, chopped
¼ cup mayonnaise
2 tablespoons vinegar
Method
Preheat the oven to 190°C
In a bowl combine olive oil, salt, paprika, garlic and kūmara
Place kūmara on an oven tray or large baking dish and bake for 20-25 minutes or until golden
In a small bowl, combine ranch dressing ingredients
Remove wedges from the oven and serve with a sprinkle of parsley and the dressing
