Lemon Orzo Salad

Lemon Orzo Salad

Ingredients
1 cucumber, diced
1 ½ cups cherry tomatoes, halved
½ red onion, thinly sliced
1 capsicum, deseeded, diced
1 large handful parsley, roughly chopped
1 ½ cups dried orzo pasta
1 lemon
Dressing
Juice of 1 lemon
Zest of 1 lemon
¼ cup olive oil
1 tablespoon Dijon mustard
Pinch salt & pepper
Method
Bring a large saucepan of salted water to a boil. Add orzo and cook until tender for 6-10 minutes. Drain
In a small bowl, whisk the dressing ingredients together. In a bowl add the dressing to the drained orzo and mix well
Gently stir in the cucumber, tomatoes, onion, capsicum and parsley. Serve with wedges of lemon.
