Manuka Tom Caprese Pasta

Manuka Tom Caprese Pasta
Serves: 2-3
Preparation: 15 Minutes
Cooking: 10 Minutes
Ingredients
2 punnets of fresh Manuka Tom cherry tomatoes
1 bunch fresh basil leaves
3 cups Fusilli pasta swirls (or pasta of choice)
3/4 cup small mozzarella balls, halved
Balsamic glaze
Dressing
¼ cup olive oil
3 tbsp red wine vinegar
1 tsp Italian seasoning
1 tsp garlic
Black pepper
Method
Add pasta to boiling water and cook for 10 minutes or until tender. Drain
While pasta is cooking, mix the dressing ingredients in a separate bowl and set aside
Once pasta is cooked, gently mix all the ingredients in a bowl except for the balsamic glaze. Drizzle the dressing over the pasta dish
Top with a swirl of balsamic glaze and extra basil leaves. Serve warm
