Mexican Roasted Kūmara Cubes

Mexican Roasted Kūmara Cubes

Ingredients
4 medium orange kūmara, chopped into small cubes
2 cloves garlic, crushed
Handful fresh coriander or parsley, roughly chopped
2 teaspoons ground cumin
1 tablespoon smoked paprika
1 teaspoon chili flakes
Pinch salt & pepper
3 tablespoons olive oil
Juice of 1 lime
Method
Preheat oven to 200°C
In a large bowl, mix together cumin, smoked paprika, chili flakes, salt, pepper, garlic and olive oil
Add the cubes of kūmara and stir to coat thoroughly. Place the kūmara cubes on an oven tray and spread evenly
Roast for 20 minutes, turning after 10 minutes. Once golden and tender, squeeze over lime juice, sprinkle with herbs and serve warm.
