Mexican Sweetcorn Dip

Mexican Sweetcorn Dip
Serves: 6 as a side
Preparation: 10 Minutes
Cooking: 2-3 Minutes
Ingredients
3 cups fresh sweetcorn kernels
1 jalapeño chilli, deseeded and finely chopped (optional)
¼ red onion, finely chopped
Handful fresh coriander, chopped
1 garlic clove, minced
Juice of 1 lemon
1/3 cup Greek yoghurt
1/3 cup feta cheese, crumbled
½ teaspoon chilli powder (optional)
1 tablespoon olive oil
Method
Heat a large pan or skillet over medium heat and add olive oil
Sauté corn for 2-3 minutes or until slightly brown. Transfer to a bowl
Add the remainder of the ingredients to the bowl with the corn and mix well
Serve with toasted pita or corn chips
