Microgreens, Citrus & Avocado Salad with Pistachios

Ingredients
¾ cup kale microgreens
5 oranges, peeled and sliced
¼ red onion, thinly sliced
1 avocado, thinly sliced
¼ cup white wine vinegar
1 small handful basil
Salt and pepper
Dressing
Juice of 1 lemon
2 tablespoons white wine vinegar
2 tablespoons olive oil
½ teaspoon salt
¼ teaspoon pepper
Method
In a bowl, toss the red onion and white wine vinegar and season with salt and pepper. Leave for 15 minutes
Arrange the oranges onto a serving platter and place the red onion and avocado on top
Top with basil, and the microgreens. Drizzle with dressing and serve
