Mushrooms on Toast
Serves: 2

Cooking: 10 Minutes
Ingredients
2 cups mushrooms, wiped and sliced
1 avocado
1 small clove garlic, minced
1 tablespoon olive oil
Pinch salt and pepper
Juice of 1 lemon
1 handful fresh basil
2 slices of bread
1 tablespoon sunflower seeds (optional)
Method
In a small bowl, mash the avocado and add garlic, lemon juice, a small pinch of salt and pepper. Mix until smooth
Heat a pan over medium heat and add olive oil. Cook the mushrooms for 5 minutes or until soft
Toast the bread and add the mashed avocado
Top with mushrooms, sunflower seeds and fresh basil leaves
