Mushrooms with Chilli & Garlic on Toast

Cooking: 5-10 minutes
Ingredients
3 handfuls of mushrooms, wiped clean and sliced (we used mixed varieties)
½ red chilli, deseeded & finely diced
1 clove garlic, crushed, finely diced
1 tablespoon olive oil
2 handfuls spinach
½ cup sauerkraut
4 slices dark rye bread
Freshly ground black pepper
Fresh thyme
Method
Heat oil in a pan over a medium heat add chilli & garlic and stir a little before adding the mushrooms. Sauté until cooked
While the mushrooms are cooking, toast the bread
Alternate the toast with sauerkraut or spinach leaves before piling on the warm mushrooms
Sprinkle with black pepper and thyme sprigs
