Orange Cake

Orange Cake

Ingredients
2 oranges
3 eggs
1 cup brown sugar
3 cups almond meal
1 teaspoon baking powder
Orange syrup
Juice and zest from 1 orange
¼ cup brown sugar
Method
Preheat oven to 180°C, grease 20cm cake tin
Place oranges into a saucepan and top with water. Bring to boil and cook for 15 minutes or until oranges are soft
Remove from heat and allow to cool. Cut oranges into small pieces then place into a food processor. Blend oranges for 20 seconds
In a bowl, whisk the eggs and sugar until creamy. Add the blended oranges, almond meal and baking powder and mix until combined
Pour mixture into cake tin and bake for 40 minutes or until a skewer inserted, comes out clean
Add syrup ingredients into a saucepan on low heat. Cook for 2-3 minutes or until syrup thickens
Pour syrup over the cake and serve with slices of fresh orange
