Parsnip and Kūmara Latkes

Ingredients
3 medium parsnips, peeled & grated
1 medium kūmara, grated
1 large handful fresh coriander, roughly chopped (save some for garnish)
1 spring onion, thinly sliced
1/3 cup flour
2 eggs
3 tablespoons olive oil
Juice of 1 lime
Chilli flakes (to taste)
½ cup sour cream or Greek yoghurt
Method
In a medium bowl combine parsnip, kūmara, flour, eggs, coriander, spring onion and chilli flakes. Stir well to combine
Heat a large pan over a medium heat and add olive oil. Add spoonful’s of mixture to the pan and flatten slightly
Cook for 4 minutes on each side or until slightly golden. Serve warm topped with sour cream, lime juice and extra coriander.
