Pear and Roasted Kūmara Salad
Serves: 4

Cooking: 20 minutes
Ingredients
4 pears, thinly sliced
2 medium kūmara, cut into small cubes
4 handfuls mixed salad greens
¼ cup sliced almonds
¼ cup grated Parmesan cheese
1 teaspoon olive oil
Dressing
3 tablespoons olive oil
1 tablespoon honey
2 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
Method
Preheat the oven to 200°C
Place the kūmara cubes onto a baking tray. Drizzle with 1 teaspoon olive oil, mix and bake for 20 minutes or until slightly golden, turning after 10 minutes. Remove from the oven and allow to cool
Add all the salad ingredients into a bowl and toss gently
In a small bowl, whisk together the dressing ingredients and pour over salad. Best served cold
