Persimmon, Apple & Kale Salad

Ingredients
3 persimmons, thinly sliced, quartered
1 apple, cored, sliced into small pieces
5 cups kale, roughly chopped
1/3 cup feta, crumbled
¼ cup sliced almonds
4 tablespoons sunflower seeds
Dressing
4 tablespoons olive oil
Black pepper
1 tablespoon red wine vinegar
Method
In a small bowl, mix together the dressing ingredients
In a large bowl, combine salad ingredients and drizzle with dressing
