Persimmon, Pear & Burrata Salad

Ingredients
3 persimmons, stalk removed and sliced
3 cups baby spinach, roughly chopped
2 pears, thinly sliced
1 handful parsley, roughly chopped
100g burrata, sliced
¼ cup sliced almonds
Dressing
Juice of 1 lemon
4 tablespoons olive oil
2 tablespoons white wine vinegar
Pinch salt & pepper
Method
In a medium bowl combine the salad ingredients
In a small bowl mix the salad dressing ingredients. Coat the salad in dressing and serve
