Poached Pear Loaf

Poached Pear Loaf
Serves: 6-8

Ingredients
3 pears
1 cup all-purpose flour
1 cup brown sugar
2 eggs
100g butter, softened
¼ teaspoon baking soda
1 ½ teaspoons baking powder
½ cup milk
Method
Preheat the oven to 180°C and line a loaf tin with baking paper
Peel the pears and leave the stalk intact. Slice the bottom so the pear can sit flat in the loaf tin
In a large bowl mix flour, baking powder and baking soda
In a separate bowl, mix the butter and sugar until fluffy. Add eggs and milk and mix well
Add the dry mixture to the wet mixture and stir until it’s a smooth batter
Pour the batter into the loaf tin and spread evenly. Insert the 3 pears vertically into the mixture and press right down
Bake for 65 minutes or until an inserted skewer comes out clean. Allow to cool for 15 minutes before removing from the loaf tin
Slice the loaf through the pears and serve
