Quinoa Salad with Lemon and Fresh Herbs
Serves: 4
Preparation: 15 Minutes
Cooking: 20 Minutes
Ingredients
1 cup parsley, chopped
3 capsicums, deseeded, chopped
1 cucumber, chopped
1 cup quinoa, rinsed
Dressing
Juice of 1 lemon
Zest of ½ lemon
1 tablespoon Dijon mustard
¼ cup olive oil
Pinch pepper
Method
Add quinoa and 2 cups of water to a pot and bring to boil over medium-high heat
Cover, reduce heat and simmer for 15 minutes or until cooked and fluffy. Allow to cool
In a small bowl, mix dressing ingredients
In a large bowl, combine quinoa and the remainder of the salad ingredients
Drizzle dressing over the salad and serve with wedges of lemon
