Raw Asparagus Salad with Parmesan and Walnuts
Serves: 3-4
Preparation: 10 minutes
Cooking: 10 minutes
Ingredients
400g asparagus, bottoms trimmed
Zest of 1 lemon
½ cup grated Parmesan cheese
½ teaspoon dried chilli flakes
½ cup walnuts, roughly chopped
1 cup wholemeal breadcrumbs
1 tablespoon olive oil
Pinch salt & pepper
Dressing
Juice of 1 lemon
2 tablespoons white wine vinegar
2 tablespoons olive oil
Method
Heat a pan over medium heat and add oil
Add the breadcrumbs and cook for 5-7 minutes or until golden. Remove the breadcrumbs and add the walnuts, stir frequently for 5 minutes or until golden. Remove from the heat
Slice the asparagus on the bias and add to a large bowl. Add the breadcrumbs, walnuts, Parmesan cheese, chilli flakes, lemon zest and salt and pepper
Combine the dressing ingredients in a small bowl and mix well. Pour over the salad and serve
