Roasted Broccoli & Tofu with Miso Dressing

Roasted Broccoli & Tofu with Miso Dressing
Serves: 2-3

Cooking: 20 Minutes
Ingredients
2 small or 1 large head of broccoli, cut into florets
250g tofu, drained well and cut into bite size pieces
1 tablespoon olive oil
Freshly ground black pepper
Dressing ingredients
1/3 cup olives, pitted (optional)
Juice of 2 lemons
3 tablespoons olive oil
2 tablespoons miso paste
2 tablespoons sesame seeds, toasted
¼ teaspoon black pepper
2 tablespoons water
Garnish
Handful parsley, roughly chopped
¼ red onion, sliced
¼ cup sliced almonds
1 teaspoon chilli flakes (or to taste)
Method
Preheat the oven to 180 degrees
Add broccoli and tofu to an oven tray or baking dish. Drizzle with 2 tablespoons olive oil and black pepper
Roast in oven for 15-20 minutes or until tender. Allow to cool
In a small blender, combine dressing ingredients and blend until smooth
Spread the dressing on two serving plates. Place broccoli and tofu onto the plates and top with extra sesame seeds, red onion, parsley, almonds, and chilli flakes
