Roasted Cauliflower and Quinoa Salad

Roasted Cauliflower and Quinoa Salad
Serves: 6 as a side
Preparation: 10 Minutes
Cooking: 30 Minutes
Ingredients
1 cauliflower, cut into small florets
1 capsicum, sliced
1 zucchini, thinly sliced
200g quinoa, cooked as per packet instructions
1 tablespoon ground paprika
¼ red onion, thinly sliced
Olive oil
Dressing
1 small garlic clove, minced
Juice of 1 lemon
Zest of 1 lemon
4 tablespoons Greek yoghurt
Method
Preheat oven to 180°C on fan bake. Place zucchini, red onion and capsicum on a baking tray and drizzle with olive oil
In a bowl, add cauliflower and a drizzle of olive oil. Sprinkle over paprika and stir to combine
Add cauliflower to the oven tray and roast for 30 mins or until slightly golden
In a small bowl, combine the dressing ingredients. Set aside
In a large bowl or platter, add the quinoa, then arrange the zucchini, red onion, capsicum and cauliflower on top. Spoon over dressing and serve
