Roasted Parsnip, Couscous & Feta Salad
Serves: 4 as a side
Preparation: 10 Minutes
Cooking: 25 Minutes
Ingredients
5 parsnips, peeled, halved lengthways
3 tablespoons olive oil
1 tablespoon honey
1 red onion, sliced
¾ cup couscous
1 handful parsley
50g feta, crumbled
1/3 cup dried cranberries or raisins
Pinch black pepper
Method
Preheat oven to 180°C on fan bake
Place the parsnips onto an oven tray and drizzle with 2 tablespoons olive oil & 1 tablespoon honey. Sprinkle with pepper and roast for 20-25 minutes or until crispy
While the parsnips are in the oven, cook the couscous as per packet instructions. Once cooked, remove from the heat, and allow to cool
Mix in the remaining olive oil into the couscous and place onto a serving plate. Mix in the parsnip, red onion, chopped parsley, cranberries, and crumbled feta
Garnish with extra parsley and serve
