Roasted Parsnip Salad

Roasted Parsnip Salad
Serves: 4

Cooking: 20 Minutes
Ingredients
4 large parsnips, cut into sticks
5 handfuls rocket
1 apple, cut into matchsticks
½ red onion, thinly sliced
1 tablespoon olive oil
¼ cup feta cheese, crumbled
Pinch salt
Dressing
Juice of 1 lemon
2 garlic cloves, minced
4 tablespoons olive oil
Pinch salt & pepper
Method
Preheat oven to 180ºC. Place parsnip sticks on an oven tray, drizzle with olive oil and sprinkle with salt
Roast for 20 minutes or until golden
In a small bowl, combine dressing ingredients and mix well
In a large bowl or serving dish, combine rocket, sliced apple, roasted parsnip, red onion, and feta cheese
Drizzle with salad dressing and serve
