Roasted sweetcorn with garlic butter
Serves: 5 as a side
Preparation: 10 Minutes
Cooking: 30 Minutes
Ingredients
5 ears sweetcorn, husked
2 tablespoons chopped parsley
½ teaspoon smoked paprika
Garlic butter
2 cloves garlic, minced
25g butter
Zest of 1 lemon
Juice of 1 lemon
Pinch black pepper
¼ cup chopped parsley
Pinch cayenne pepper
Method
Preheat the oven to 180°C
In a small bowl, combine garlic butter ingredients and set aside
Place sweetcorn onto an oven tray or directly on the oven rack and roast for 30 minutes, turning every 10 minutes
Spread butter over sweetcorn and garnish with parsley and paprika
