Roasted Tomato, Fresh Herb and Burrata Salad
Serves: 6 as a side
Preparation: 10 Minutes
Cooking: 20 Minutes
Ingredients
2 cups cherry tomatoes, halved if large
150 grams burrata cheese, chopped into smaller pieces
Mixed handful of herbs: mint, thyme and parsley leaves (roughly chopped)
2 tablespoons olive oil
Dressing
¼ cup olive oil
2 tablespoons balsamic vinegar
Juice of 1 lemon
2 garlic cloves, minced
Black pepper
Method
Preheat oven to 180°C. Place tomatoes on an oven tray and drizzle with olive oil. Bake for 20 minutes or until soft
In a small bowl, mix together the dressing ingredients
When tomatoes are cooked, place into a salad bowl or serving dish. Top with burrata, fresh herbs and drizzle with salad dressing. Serve warm or at room temperature
