Stacked Apple Salad
Serves: 2-3

Ingredients
2 green apples, thinly sliced
1 red apple, thinly sliced
¼ cup crumbled feta
Handful of fresh herbs of choice
4 tablespoons sliced almonds – can use any nut of choice
Microgreens (optional)
Dressing:
Juice of 1 lemon
1 teaspoon Dijon mustard
2 tablespoons olive oil
Pinch of salt
Method
In a small bowl, combine dressing ingredients
On two small serving plates, layer apple slices
Top with feta, sliced almonds or nuts of choice, fresh herbs and microgreens
Drizzle with dressing and serve
