Sticky Roasted Kūmara and Apple

Cooking: 45 minutes
Ingredients
4 kūmara, sliced lengthwise
1 red onion, peeled and cut into wedges
4 apples cut into wedges (we used Envy)
1/4 cup, brown sugar
1 cinnamon stick
2 tablespoons dark rum
2 tablespoons finely grated orange rind
Olive oil
Method
Preheat oven to 190°C
Evenly spread olive oil in a baking tray, then place kūmara, onion and apple in a single layer. Sprinkle over the sugar, rum, orange rind and cinnamon stick
Roast, turning once, for 45 minutes or until tender
This makes a great side dish for roasts of all kinds
