Strawberry & Beetroot Salad
Serves: 6 as a side
Preparation: 10 Minutes
Cooking: 20-25 Minutes
Ingredients
3 beetroot, washed and stem removed, sliced
5 handfuls rocket or baby spinach
Handful mint leaves
3 cups strawberries, sliced and stems removed
¼ cup crumbled feta
Dressing
1 tablespoon honey
4 tablespoons olive oil
Juice of 1 lemon
Pinch freshly ground black pepper
Method
Preheat oven to 180°C. Place sliced beetroot onto an oven tray and roast for 20-25 minutes until tender, turning after 10 minutes. Remove from the oven and allow to cool
In a small bowl, mix together the dressing ingredients
In a large bowl, combine beetroot, rocket and strawberries. Top with mint leaves and feta. Drizzle with dressing and serve
