Summer Berry & Green Salad

Summer Berry & Green Salad
Serves: 6
Preparation: 15 Minutes
Cooking: 5 Minutes
Ingredients
2 cups strawberries, stalks removed and sliced
1 cup blueberries
1 bunch asparagus
2 cups baby spinach leaves
1 avocado, diced
½ cucumber, sliced
1/3 cup crumbled feta
¼ cup sliced almonds or nut of choice
Dressing:
Juice of 1 lemon
1 tablespoon Dijon mustard
4 tablespoons olive oil
4 tablespoons white wine vinegar
Pinch salt & pepper
Method
Bring a pot of water to boil and place in the asparagus. Boil for 1-2 minutes until bright green. Remove from pot and place into a bowl of iced water. Drain and slice into 4cm pieces
In a large bowl, mix all of the salad ingredients
In a small bowl, mix the dressing ingredients and then drizzle over the salad
