Tamarillo & Cinnamon Puddings

Tamarillo & Cinnamon Puddings
Serves: 4

Cooking: 25-35 Minutes
Ingredients
4 tamarillos – 2 peeled and sliced in half length wise, 2 peeled and chopped into pieces
½ cup brown sugar plus 2 teaspoons
70g butter, softened
2 eggs
2 teaspoons cinnamon
½ cup milk
1½ cups self-raising flour
Butter or oil to grease pudding cups
Toppings (optional):
Plain yoghurt
Cinnamon
Method
Preheat the oven to 180°C. Grease 4 pudding moulds and sprinkle half a teaspoon of sugar into each one
Place the halved tamarillos into each mould with cut side down.
In a bowl, cream the butter and sugar until well combined. Add the eggs, chopped tamarillo and cinnamon
Fold through the flour and milk. Pour the mixture into each pudding mould
Place moulds onto a baking tray or dish and place into the oven for 25-35 minutes or until an inserted skewer comes out clean
Let the puddings sit for 15 minutes before removing from the mould
Serve with extra cinnamon and natural yoghurt (optional)
