Thai Mango Salad

Thai Mango Salad
Serves: 4 as a side

Ingredients
2 mangos, peeled and thinly sliced
1 capsicum, thinly sliced
¼ red onion, thinly sliced
Handful coriander, chopped
¼ cup peanuts or cashews
Dressing
1 tablespoon soy sauce or tamari
1 tablespoon olive oil
1 tablespoon sesame oil
1 teaspoon sesame seeds
Method
Mix sliced mango, capsicum and red onion in a serving bowl or serving plate. Toss well
In a small bowl, combine dressing ingredients and drizzle over the salad
Top with coriander and peanuts. Serve immediately
