Tomato, Apricot and Burrata Salad

Tomato, Apricot and Burrata Salad
Serves: 6 as a side

Ingredients
4 apricots, stone remove, sliced lengthwise
2 cups cherry tomatoes, halved if large
200g burrata cheese
Small handful mint leaves
Dressing:
¼ cup olive oil
3 tablespoons balsamic vinegar
Zest of 1 lemon
1 tablespoon honey
1 garlic clove, minced
4 basil leaves, finely chopped
2 sprigs fresh thyme, chopped
1 handful fresh mint, chopped
Method
In a small bowl, mix-together the dressing ingredients
In a large bowl, combine all the salad ingredients apart from the mint leaves
Break up the burrata balls and place around the salad
Drizzle with salad dressing and garnish with mint leaves
