Tomato Galette

Tomato Galette
Serves: 6-8
Preparation: 10 Minutes
Cooking: 25 Minutes
Ingredients
300g tomatoes of choice, sliced
Handful basil
1 sheet flaky pastry
100g feta, crumbled
Freshly ground black pepper
Method
Preheat the oven to 180°C
Place pastry on lightly greased oven tray. Sprinkle feta cheese and half of the basil leaves over the pastry, leaving a border of 3cm
Place tomatoes over the top of the feta and basil, season with black pepper
Bake for 20 minutes or until crust is golden. Allow to cool before slicing
Top with the remainder of the basil and serve
