Beetroot Crepes

Beetroot Crepes
Serves: 2-3 (5 Crepes)

Ingredients
1 large cooked beetroot
1 egg
150ml milk
60g plain flour
1 tablespoon olive oil
Fillings
Cooked beetroot slices
Lettuce
Parsley
Tomato
Lemon juice
Grilled chicken, shredded (optional)
Lite sour cream
Method
Chop the cooked beetroot into small pieces and place into a food processor and puree
In a large bowl, combine the egg, half of the milk, flour and beetroot puree
Mix until it is a smooth batter. Add the remainder of the milk and mix again
Brush a fry pan with olive oil and place over a medium heat. Once the pan is hot, pour in a portion of the mixture and swirl so the batter thinly coats the surface of the pan
Cook for 2-3 minutes on each side until tiny air bubbles appear and then carefully flip. Repeat until all mixture is used
Add fillings and serve warm
