Hasselback Kūmara with Herb Sauce
Serves: 4 as a side
Preparation: 10 Minutes
Cooking: 35-40 Minutes
Ingredients
4 kūmara
2 tablespoons olive oil
Coriander leaves for garnish
Sauce
¼ cup Greek yoghurt
Handful fresh coriander, finely chopped
Handful dill, finely chopped
1 clove garlic, minced
Method
Preheat oven to 200°C
Thinly slice the kūmara leaving the bottoms intact. Place onto an oven tray and drizzle with olive oil
Roast in the oven for 35-40 minutes or until golden and crisp
In a small bowl combine the dressing ingredients and mix well
Top kūmara with a small amount of sauce and sprinkle over extra coriander before serving
