Asparagus & Bean Crunch Salad
Serves: 6 as a side

Ingredients
2 bunches asparagus, sliced thinly lengthwise
3 cups baby spinach, chopped
1 ½ cups shelled white beans
Handful fresh mint leaves
¼ cup pistachios (optional)
¼ red onion, finely sliced
Dressing
2 tablespoons white wine vinegar
Small pinch of salt
3 tablespoons olive oil
Method
Arrange baby spinach on a serving plate. Top with remaining salad ingredients
Add salad dressing ingredients to a small bowl and mix together
Pour dressing over the salad and gently toss to coat. Serve immediately
