Asparagus & Cherry Tomato Tart with Feta

Ingredients
1 bunch of asparagus, ends snapped
½ cup feta cheese, crumbled
8 filo pastry sheets, thawed
1 cup cherry tomatoes, halved
4 tablespoons olive oil
½ cup spring onion, chopped
Black pepper to taste
Method
Pre heat the oven to 180°C on fan bake. Line an oven tray with baking paper
Place 1 filo sheet on the lined oven tray. Lightly brush filo sheet with oil, and top with another filo sheet. Repeat layers with remaining filo sheets and oil, reserving 1 teaspoon oil to brush on asparagus
Arrange asparagus spears side by side on the filo pastry and brush with remaining 1 teaspoon oil
Place tomatoes and spring onion on top of the filo, sprinkle with feta cheese and pepper
Bake for 20–25 minutes or until the filo is crispy. Enjoy warm
