Broccoli and Parmesan Fritters

Broccoli and Parmesan Fritters
Serves: Makes 8 Fritters

Ingredients
2 small or 1 medium head of broccoli
¾ cup Parmesan cheese, grated
2 eggs
4 tablespoons flour (extra if mixture is too wet)
1 small clove garlic, minced
3 tablespoons fresh parsley, roughly chopped
2 tablespoons olive oil
Pinch salt & freshly ground pepper
Toppings
1 lime or lemon
Plain yoghurt
Method
Roughly chop the broccoli florets into small pieces. There should be around 3 cups. Place in a bowl and cook in the microwave for 2 minutes to soften
In a medium bowl, whisk the eggs and add the Parmesan cheese, flour, garlic, parsley and salt & pepper. Stir in the broccoli and mix well
Heat the olive oil in a fry pan over medium heat. Scoop ¼ cup of batter and drop into the pan, gently flattening with a spoon
Cook each side of the fritter for 2-3 minutes or until golden brown. Repeat with all of the batter
Squeeze lime or lemon juice over the fritters and serve with yoghurt
