Broccoli & Cranberry Salad

Ingredients
1 large head of broccoli, chop florets into small pieces and thinly slice stalks
1/3 cup dried cranberries
½ red onion, finely sliced
¼ cup sliced almonds
½ cup cheddar cheese (optional)
Dressing
1/3 cup olive oil
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
Method
In a large bowl gently mix the salad ingredients
Combine the dressing ingredients and pour over salad. This salad is best served at room cold
Store any leftovers in the fridge
